The science of CO₂
When hot water meets freshly roasted coffee, something beautiful happens. That dome of bubbles rising from your grounds is CO₂ escaping, the signature of peak freshness.
Stage One
Roasting
Heat transforms sugars and acids inside the bean, trapping CO₂ in thousands of tiny pockets.
Stage Two
Resting
Over days and weeks, CO₂ slowly escapes. The peak window lands 2 to 14 days post-roast.
Stage Three
Blooming
Hot water releases the remaining CO₂ as a dome of bubbles. The visual signature of fresh coffee.
CO₂ acts as a shield between water and coffee. A proper bloom lets that gas escape first so water can extract evenly, pulling out sweetness and complexity instead of harsh, under-extracted flavors.

48 Hours vs 30 Days
What does freshness actually look like? The difference between coffee two days off the roast and coffee a month old is not subtle. It is dramatic.

Timing is everything
The 30-Second Rule
The first pour is the most important. Here is how to nail it every time.
Heat your water to 200-205°F
Just off boil. Too hot scorches the grounds. Too cool under-extracts.
Pour just enough to saturate
About twice the weight of your coffee. Every particle wet, nothing more.
Wait 30 seconds
Watch the bloom rise and fall. When the dome settles and the bubbling slows, CO₂ has cleared. Ready for the full pour.
Why 30 seconds
Pouring too early traps CO₂ in the slurry, creating channels where water rushes through and dead spots it never reaches. The result is uneven extraction: sharp, sour notes from some grounds, bitter from others. Thirty seconds lets the gas clear so water can do its job evenly.
Pro tip. Darker roasts degas faster and may only need 20 seconds. Lighter roasts hold more CO₂ and can benefit from 35 to 40.
