Where the beans come from matters. How they are grown, processed, and cared for before they ever reach a roaster shapes everything you taste in the cup.

The Kintamani Anchor
Deep Soil comes from the Kintamani Highlands of Central Bali, where coffee grows between 1,200 and 1,600 metres on volcanic slopes near Lake Batur. The farmers here work within the Subak Abian system, a traditional Balinese cooperative rooted in the Hindu philosophy of Tri Hita Karana: balance between people, nature, and the spiritual world.
The beans are wet-hulled using Giling Basah, a processing method native to the Indonesian archipelago that removes the parchment while the bean still holds moisture. This produces a cup you won't find from washed or natural coffees elsewhere: smooth, full body, and an earthy depth layered with baker's chocolate, orange peel, juniper, and molasses. We roast it to the medium-dark range to bring out those deeper notes without losing clarity. That balance is what makes this coffee the anchor of our lineup.

Tarrazú Discovery
First Bloom grows in the Tarrazú region of Costa Rica, in the mountains of San José province. Coffee here grows at 1,300 to 1,600 metres on volcanic loam. Cooler temperatures at elevation slow the coffee cherry's ripening cycle, giving the sugars more time to concentrate inside the seed. That patience shows up in the cup.
These beans are fully washed, a processing method that strips the fruit away before drying so the bean's own character comes through without interference. The result is a bright, clean cup with brown sugar sweetness, stone fruit, and a warm spice note that develops as it cools. We roast it medium-light to preserve that brightness. Costa Rica's renowned Tarrazú region is considered one of the world's great coffee origins for a reason: precision farming, volcanic terroir, and a climate that does half the work before the roaster ever touches the bean.

Swiss Water Process
Most decaf coffee is stripped of caffeine using chemical solvents like methylene chloride or ethyl acetate. Swiss Water Process works differently. Green beans are soaked in water saturated with coffee's soluble flavor compounds (called Green Coffee Extract), creating a diffusion-driven environment where caffeine migrates out of the bean while the flavor molecules stay put. No chemicals touch the coffee at any point. The result is 99.9% caffeine-free coffee that tastes like coffee, not like a compromise.
We chose Peruvian beans for Still Bloom because their natural smoothness and full body hold up through both the decaf process and a dark espresso roast. Many decafs fall apart under roasting pressure; the flavor thins out or turns papery. Peru's high-altitude arabica has enough structural integrity to come out the other side intact. Rich, full-bodied, honest. This is the cup you reach for after dinner without having to negotiate with your sleep schedule.

Meet the Farmers
Full Bloom comes from the Sul de Minas region of southeastern Brazil, one of the oldest and most established coffee-growing areas in the Americas. The estates here sit between 950 and 1,100 metres on rolling hills of red volcanic soil, where generations of farming families have refined their cultivars and processing methods over more than a century. Mundo Novo, Catuai, Icatu, and Bourbon varieties grow side by side, each selected for how it performs in this specific terroir.
Brazil produces roughly a third of the world's coffee. Sul de Minas produces the best of it. The beans are naturally processed, dried whole in the fruit on concrete patios under the sun. This concentrates the natural sugars and builds the smooth, balanced character the region is known for: mandarin orange brightness, a clean chocolate finish, and a body that feels effortless. We roast it to a true medium to let the origin speak. No tricks, no heavy roast to hide behind. Just a bean that's been grown well by people who've been doing this longer than most coffee brands have existed.
